Pumpkin Granola. For Real.

So, the midterm is over.  Finally.  Thank goodness.  It feels so good to be free!  Yay!

So what do I do to relax after my crazy week of studying?  Bake.  And catch up on my emails.  And watch The Young Victoria.  Mmmm.  And I get to see NES this evening.  I am a fan of being able to relax.

So, I think I've finally got the pumpkin granola down.  Finally.  It only took 3 tries and a whole can of pumpkin.  Ok, that doesn't seem like that much pumpkin.  But when you're using less than a third of a can each, it seems like more.

I may have inadvertently made it less healthy than my usual granola recipe, but still.  It is pumpkin.  Not as crunchy as the second try, and not as sweet as the first try, but I think it's there.  It tastes like pumpkin.  It's granola.  And it's yummy.

Ok, here goes.  I can't be super specific about the amounts, especially with the spices because I didn't measure!


Pumpkin Granola


3 cups oats
1 1/2 cups wheat germ
2/3 cups oil
3/4 cup sugar
1/3 can pumpkin
~1 tsp. cinnamon
~1/2 tsp. allspice
~1/2 tsp. nutmeg
~1/4 tsp. ginger
dash ground cloves
dash salt

Mix all ingredients until well combined.

Line a baking sheet with foil.  Spread the granola on the baking sheet into a fairly uniform thickness.

Bake at 325 for 15 minutes.

Stir through the granola so it has turned over and the edges are mixed in (otherwise it will burn).

Return to bake for 15-20 more minutes, until lightly golden brown.
