Just in case you were wondering . . .

I didn't actually eat ground beef last night.  April fool's!

Sorry, but that one is just a little too far out onto a limb for me.  At least choosing to cook it for myself is!

So what were the supposed shepherd's pies?

Cocoa Krispie treats, complete with Airhead peas and carrots and marshmallow potatoes!

And although they weren't shepard's pies, they got NES's approval.

I also made a giant cupcake out of the leftovers!  So technically, on April fool's day, I made a giant fake meatloaf cupcake.  Does that make it a giant fake fake cupcake?  Muahahaha.

In reality, we had barbecue chicken Caesar salad naan pizza.  On my first try at making naan!  But that's another post for another day!


Cocoa Krispie Shepard's Pie
Adapted from Party Pinching and Spoonful.com

2 tbsp. butter
1 1/2 tbsp. cocoa powder
10 oz. bag of marshmallows
6 cups Cocoa Krispie cereal
orange and green taffy candies
marshmallows and fluff, for topping

Cut the green and orange taffy into small squares, and roll the green ones between your hands until they are round.  The goal is to get them to look like peas and carrots.

Melt the butter over low-medium heat and add the cocoa powder.  Mix well.

Add the 10 oz. of marshmallows and stir constantly until the mixture is smooth.

Quickly stir the cereal and taffy into the melted marshmallows.  I did 2 cups of cereal, half the taffy, 2 more cups of cereal, the rest of the taffy, 2 cups of cereal, so that the "vegetables" would be distributed evenly.

Mix well!  You may need to use your damp hands if the mixture gets too stiff.

Press the mixture into ramekins with damp hands, and allow to harden.

When ready to serve, top with a mixture of marshmallow fluff and torn marshmallows.  Broil until the top is light brown and looks like potatoes!
