The Return of the Mug Cakes
Ok, so I don't really have much to say about this, but I have to blog about it now. Right now. Because it was that amazing. And it was a nice diversion from my afternoon of reading.
I happened to have a picture of cake up on my computer and NES immediately said "I want cake." Oh, and I did too.
Excellent.
So, I made a mug cake . . . a red velvet mug cake! I haven't made one in such a long time! At least not from scratch. Maybe since last school year?
And I even used the water trick to make sure my egg was still fresh! I need to remember that one.
It was awesome. I mean, of course, having cream cheese frosting on hand made the whole thing so much better.
Red Velvet Mug Cake
adapted from My Happy Place
4 tbsp. flour
4 1/2 tbsp. sugar
1/8 tsp. baking powder
1 1/2 tbsp. cocoa powder
3 tbsp. oil
3 tbsp. buttermilk
1 egg
1/2 tsp red food coloring
Mix all ingredients in a large mug using a fork or small whisk, trying to get the batter as smooth as possible. Microwave for about 1 1/2 - 2 minutes.
Top with cream cheese frosting.
Perfect for sharing. :)

MUG CAKE! I haven't made it since leaving Gordon, and I had even bought a mug specially for that purpose! I guess I need a microwave.
