Cooking by the Campfire

I should probably either be unpacking or working on something for school tomorrow.  But instead I'm editing a video for a campfire cooking contest!

We took our annual Labor Day camping trip this weekend, and GWS pointed out the cooking contest to us!  NES and I didn't have any ideas until we went to an awesome little market/cafe (with really good grilled cheese sandwiches!) and a sign for cheese curd out front.  Campfire poutine was born!

Campfire Poutine

4 medium potatoes, sliced into fry-like shapes
cooking spray
garlic salt, to taste

1/4 cup butter
1/4 cup flour
1 cup water
1 tbsp. beef Better than Bouillon
pepper, to taste

about 4 oz. cheese curds

Process:
Lay out a piece of aluminum foil and spray liberally with cooking spray.  Spread the potatoes on the foil so that they are only about 2 or 3 layers thick.  Leave the edges free so that you can cover the top and fold them over.

Also spray the tops of the potatoes liberally with cooking spray, and sprinkle with garlic salt.  Cover with a second layer of aluminum foil, and fold up the edges.

Place the potato packets (you may need to make two) over the fire.  Carefully flip the packets occasionally.

Meanwhile, melt the butter in a saucepan over the fire.  Add the flour and mix.

Add about 1/2 cup of the water and stir well.  There should be no lumps.

Add the remaining water and beef bouillon.  Add pepper to taste.  Stir constantly until the gravy begins to thicken.  Remove from heat once the gravy is as thickened.

Meanwhile, check the potatoes by carefully opening the edges and testing for fork-tenderness.

Once the potatoes are fork-tender, pour them into a bowl or plate and pour the gravy over them.  Sprinkle the cheese curds on top of the gravy.  Dig in!
