Salsa Chicken

So, this week magically ended up being a very different sort of week.  I finished all my homework for Wednesday (my crazy homework due date) on Monday.  That is unheard of.  And, although I have a midterm on Friday and Thursday is dedicated to a precalc test, I really don't feel that bad about the rest of the week.  And I have wedding dress shopping to look forward to!  Wait, isn't that supposed to mean I eat like salads and fruit all week?  If so, I've failed this week.  Oops.

But with all of that, I was planning on really cooking tonight.  I have some really good fall meals up my sleeve that I can't wait to pull out!  But, mom and dad were on their way home from a weekend away and driving pretty close by, so they stopped for part of the evening.  They had been with BB, PM and MS for the weekend.  NES and I stopped there to visit and had a fun engagement photo shoot with them in a beautiful coastal setting.  So I decided that when your parents come, and you offer to make them dinner, and they say, "no, let's go out," there's not much to be said.  Especially when they come bearing peeps and tea and the famous Mo Brownies.   I will say we found a pretty good new restaurant, though.  That's always a good thing.

I also might have made dinner last night, but NES came to surprise me and made me his specialty sandwiches that I was craving.  I am looking forward to when he can cook for me any night.  Look forward to some guest chef posts once we're married.

So, long story short, I didn't cook last night, I didn't cook tonight, and it doesn't look like I'll be cooking this week.  I have some plans, but it just doesn't look like they are gonna happen any time soon.

But, last week, I did make something I never blogged about.  So here goes.
I used a veggie chicken breast.  I know, it sounds weird, but they are so much easier to work with than real meat, and I kind of like them.

And I cooked it according to the package directions for the stove top until the last two minutes of cooking or so.
Then, I added one small can of corn and some salsa and let it heat through.
Then, I sprinkled it with Monterey Jack cheese, and let it melt.
It was easy, and sure it wasn't the most exciting meal ever, but it satisfied a Mexican food craving.
And I'm sure it would work just as well with a regular pan fried chicken breast.

Yup.  Hmmm.  There are schemes of baking going on in my head right now . . . Let's see what happens.
