Muffin Pancakes

Please. Don't get used to this. I've posted thrice this week already. It's only because Christmas requires a lot of baking. It's not going to keep up like this.

When I first started reading Bakerella, one of the first food blogs I found, I found a recipe for "Mini Maple Pancake Muffins" and I knew it would be perfect for Sunday school breakfast. But that was in October. It's now December. I just made them.
They also satisfied my craving for Saturday morning baking. Seriously, it's the best time for baking.

So, first of all, these pancakes are muffins. Which mean they use a cupcake pan. Yes, it's a cupcake pan. Not a muffin pan. Cupcakes > Muffins. That makes them awesome.
Plus, they are like bite size chocolate chip pancakes. Seriously? The best. They are a little fluffier than your average pancake, but they also mean you don't have to stand in front of a griddle while everyone else eats and breakfast gets cold. Yup yup yup.
By the way, these call for buttermilk. Buttermilk is easy to make if you take1 tsp. white vinegar and enough regular milk to make 1 cup and let them sit for a few minutes. In this case, it would be 2/3 tsp (which the mathematical side of me would tell you to use the 1/2 tsp. spoon once then then fill it 1/3 of the way a second time . . . the baker side of me would tell you to be close, but wing it), then enough milk to make 2/3 cup. It's much better than having a bunch of buttermilk sitting in the fridge with no use.
Also, I don't know how she gets them to look so cute with the chocolate chips on top. When I sprinkled them over the batter, the chocolate just sunk while they were baking. Oh well, extra chocolate chips are not a problem.

  1. There are powdered buttermilk products available for cooking and baking such as Saco cultured Buttermilk blend. It is recommended to refrigerate them after opening but they have a long shelf life and no artificial preservatives. Also, plain yogurt can often be substituted for buttermilk though it is less liquid and may have some effect on texture.
